THE DISH

MEXICAN STREET CORN DIP

Fact: there will be a lot of grilling this weekend...so shake things up with something way more fun than your standard corn on the cob! Your fellow party-goers will love this creamy, sweet (& a little spicy) Mexican-inspired app. Did we mention how 1-2-3 easy it is to make? See for yourself!

INGREDIENTS

  • 2 tbsp unsalted butter
  • 4 cups corn kernels (frozen, canned, or roasted)
  • 1 jalapeño, seeded an diced
  • 3 tbsp mayonnaise
  • 2 tbsp crumbled cotija cheese
  • 2 tbsp chopped fresh cilantro leaves
  • ½ tsp chili powder
  • 1 clove garlic, pressed
  • 1 lime, juiced

INSTRUCTIONS

Melt butter in a large skillet over medium-high heat. Add corn, jalapeño, stirring occasionally until cooked through (about 8-10 minutes). Stir in mayonnaise, cotija cheese, cilantro leaves, chili powder, garlic, and lime juice. Garnish with extra cotija cheese and cilantro. Serve with chips.

SIMPLE STRAWBERRY SANGRIA

The perfect crowd-pleaser punch should be equal parts easy to make and yummy to sip...and this one definitely fits the bill. Watch along as we show you how to make this summery Strawberry Sangria — the ultimate throw-everything-in-a-blender-and-call-it-a-day drink. Best party? Its no-fuss nature makes it super simple to customize. Short on berries? Don't! Go ahead and blend in some more citrus (or any other juicy fruit you have on hand). Hosting a dry party? No prob! Sub in some seltzer and serve. However you like it, start sipping on summer...the pink way!

INGREDIENTS

  • 1 watermelon
  • 1 lb strawberries
  • 1 bottle Rosé wine
  • 1 cup vodka
  • 1 cup Cointreau (or Limoncello)
  • 2 oranges, juiced
  • 1 lime, juiced
  • 1 lime, sliced

INSTRUCTIONS

Slice watermelon into large chunks. Save smaller pieces for sangria jar. Blend watermelon chunks with a handful of strawberries until smooth. Strain fruit juice through a fine mesh strainer into a large measuring cup, eventually yielding 4 cups of watermelon + strawberry juice.

Put sliced lime, orange, and extra strawberries in the sangria pitcher. Stir watermelon + strawberry juice, wine, vodka, Cointreau (or limoncello), orange juice, and lime juice. Chill thoroughly before serving. Pour over ice.
